  • 1 Tbsp. Butter or possibly margarine
  • 1 Tbsp. Extra virgin olive oil
  • 3 lb Pork chops, cut 1" thick
  • 1/2 c. Rasperry vinegar, divided
  • 3 x Cloves garlic, sliced thin
  • 2 x Tomatoes, seeded and minced
  • 1 tsp Dry sage, thyme, tarragon or possibly basil
  • 1 Tbsp. Dry parsley
  • 1/2 c. Chicken broth Salt and pepper, to taste

Direcciones

  1. Heat butter in a large skillet; add in oil. Brown pork on each side over high heat. Pour off oil; reduce heat to medium-low. Add in 2 tbsp vinegar & garlic.
  2. Cover; simmer for 10 min. Remove pork & keep hot. Add in remaining vinegar; stir up browned bits from bottom of skillet. Raise heat & boil till the vinegar is reduced to a thick glaze. Add in the tomatoes, sage, parsley & chicken broth. Boil till liquid is reduced to half of the original volume. Strain sauce; season with salt & pepper. Spoon over chops.
  3. Variation: chicken breasts may be substituted for pork.
