Receta Blueberry Banana Snack Cake

Ingredientes
- 1 1/4 c. Sugar
- 2/3 c. Land O Lakes butter, melted
- 1/4 c. Buttermilk
- 2 x Large eggs
- 1 tsp Vanilla
- 3 med , ripe bananas, mashed
- 2 c. All-purpose flour
- 3/4 tsp Baking soda
- 1/8 tsp Salt
- 1 c. Fresh or possibly frzn blueberries Powdered sugar, if you like

- Heat oven to 350 . In large mixer bowl combine sugar, butter, buttermilk, Large eggs and vanilla. Beat at medium speed, scraping bowl often, till creamy
- (1-2 min). Add in bananas; continue beating till well mixed (1 minute).
- Add in flour, baking soda and salt. Beat at low speed till moistened (1-2 min). By hand, stir in blueberries. Spoon into paper-lined muffin c..
- Bake for 25-30 min or possibly till toothpick inserted in center comes out clean. Remove from pan. Cold. Just before serving, sprinkle tops of cakes with powdered sugar.
- Yields 20 snack cakes.
- NOTE: 1 tsp. lemon juice or possibly vinegar plus sufficient lowfat milk to equal 1/4 c. can be substituted for the 1/4 c. buttermilk.
