Receta Boston "Baked" Beans

Ingredientes
- 1 lb dry small white beans - (2 c.)
- 2 x bacon slices minced
- 2 med onions peeled, minced
- 4 x garlic cloves peeled, chopped
- 3 c. chicken broth
- 2 tsp dry mustard
- 1/4 tsp freshly-grnd white pepper
- 1/2 c. molasses
- 1/2 c. ketchup
- 1/4 c. brown sugar
Direcciones
- Wash, sort and soak beans.
- In a 5-qt or possibly larger pressure cooker, fry bacon over high heat, stirring often, till lightly golden brown. Reduce heat and add in onion and garlic, stirring often.
- Add in broth, soaked liquid removed beans, dry mustard and white pepper over high heat. Stir till mixed.
- Close lid and bring pressure to second red ring (15 pounds pressure) over high heat. Adjust heat to stabilize pressure at second red ring. Cook for 6 min.
- Remove from heat and use Natural Release Method.
- Drain cooking liquid from beans and return them to pressure cooker or possibly a warmed casserole. Add in molasses, ketchup and brown sugar. Stir till well mixed and sauce clings to beans.
- This recipe yields 8 to 10 servings.
