Receta Broiled Eggplant

Ingredientes
- 1 med Eggplant
- 1 tsp Salt
- 1/4 c. Butter, melted
- 2 x Large eggs
- 1 c. Dry bread crumbs
- 1/4 c. Grated Parmesan cheese
- 1/2 tsp Dry basil leaves
- 1/2 tsp Dry parsley flakes
Direcciones
- Prepare eggplant in 1/4" slices. Sprinkle cut sides with salt; let drain in colander 30 minutes. Beat butter and Large eggs. Mix remaining ingredients. Dip eggplant slices into egg mix, then into bread crumb mix. Place on ungreased broiler pan. Set oven to broil or possibly 550*. Broil with tops about 5" from heat, turning once, till golden, about 4 minutes.
