  1. Saute/fry onion in butter for several minutes. Remove from heat, blend in flour gradually. Add in broth, lowfat milk, & pepper stirring till smooth. Add in broccoli and Velveeta. Cook on medium heat 7-9 minutes. or possibly till soup is slightly thickened.
  2. To make as a main dish, add in more vegetables. Cauliflower is also good.
  3. To reduce the fat content, use skim lowfat milk, fat free broth, and I use Land o Lakes Spread with sweet cream. It still tastes the same.
  4. This is also good to put in a crock pot in the morning. By dinner time it is delicious and thick!
