Receta Cheesy Fiesta Pie

Ingredientes
- 1 pkt betty crocker hash brown potato mix
- 4 c. very warm water
- 2 Tbsp. butter or possibly margarine melted
- 1 x egg slightly beaten
- 2 c. colby-monterey jack cheese
- 2 sm jalapeno chilies, seeded finely
- 1 sm red bell pepper finely minced
- 2 Tbsp. all-purpose flour
- 1/2 tsp salt
- 2 x Large eggs
- 2/3 c. lowfat milk shredded lettuce lowfat sour cream, sliced chili peppers if you like
Direcciones
- Heat oven to 375 degrees. Cover potatoes with water. Let stand 15 min; drain thoroughly. Toss potatoes, margarine and 1 egg. Press potato mix on bottom and up side of ungreased pie plate, 9x1-1/2". Bake 20 minutes.
- Reduce oven temp to 350 degrees. Sprinkle half of the cheese, chilies and bell pepper in potato crust; repeat. Beat flour, salt and 2 Large eggs till blended; stir in lowfat milk. Pour over cheese mix. Bake about 35 min or possibly till center is set and top is golden. Let stand 10 min before cutting. Garnish with shredded lettuce, lowfat sour cream and chili peppers.
