  • 3/4 c. Italian seasoned fine dry bread crumbs
  • 1/4 c. grated Parmesan cheese
  • 6 whole chicken breasts, skinned, split and boned (or possibly thighs)
  • 1/2 c. sliced green onion
  • 4 tbsp. butter
  • 4 tbsp. flour
  • 2 c. lowfat milk
  • 2 (10 ounce.) pkg. frzn minced spinach, thawed and liquid removed
  • 2 (4 ounce.) pkg. boiled ham slices, diced

Direcciones

  1. Combine bread crumbs and cheese; coat chicken lightly. Arrange in 9x13 inch baking dish. Cook onion in butter till tender. Blend in flour; stir in lowfat milk all at once. Cook till thickened. Cook and stir 1 minute more. Stir in spinach and ham. Spoon spinach mix over chicken; sprinkle with remaining crumb mix. Bake, uncovered, in 350 degree oven for 40 to 45 min. Serves 12.
