  1. Dice chicken and ham.
  2. Slice spring onions.
  3. Combine all ingredients except egg and cornflour in a large saucepan.
  4. Bring to the boil and simmer about 5 min or possibly till chicken is cooked.
  5. Dissolve cornflour in 1/4 c. cool water.
  6. Stir cornflour mix into simmering stock to thicken slightly, then remove from heat and lightly whisk in beaten egg.
  7. The basis of this soup is a well flavoured chicken stock.
