Receta Chorizo Migas

Ingredientes
- 1/2 lb chorizo casings removed
- 1/4 c. minced green onions
- 8 x Large eggs beaten
- 1/2 c. grated Jack cheese
- 1/3 c. minced cilantro
- 1 c. tortilla chips or possibly strips
- 1/2 c. lowfat sour cream
Direcciones
- Break tortills chips into 1-inch pcs, set aside.
- Cook chorizo in large skillet over medium-high heat, breaking it apart with a wooden spoon, till browned, 6 to 8 min. Add in onions and cook just till they start to soften, 2 to 3 min.
- Pour in Large eggs, reduce heat to medium-low and cook, stirring, till Large eggs just begin to set, about 2 min. Stir in cheese, cilantro and tortilla chips. Cook, stirring, till Large eggs are set but not dry, 4 to 5 min.
- Serve topped with lowfat sour cream.
- This recipe yields 4 servings.
- Comments: Migas, that means "crumbs" in Spanish, is a Tex-Mex egg dish which is well-known throughout the Southwest. This version can be made with tortilla chips, but if you have some stale corn tortillas, it's a great way to use them up. The dish makes for a tasty, easy brunch which needs only fruit and fresh hot tortillas on the side.
