Receta Company Cranberry Bread

Ingredientes
- 2 c. flour
- 1 c. sugar
- 1/2 teaspoon baking soda
- 1 1/2 teaspoon baking pwdr
- Healthy pinch salt
- Rind of orange
- 1 egg, beaten
- 2 T oil
- 1 c. cranberries, minced
- 1/2 c. nuts, minced
Direcciones
- Put in a big bowl and mix the flour, sugar, baking soda, baking pwdr and pinch of salt. Put in a cup the grated rind and juice of 1 orange, boiling water to make 3/4 cup in all. Put in a small bowl: 1 egg, beaten, 2 tbsp oil. Mix the juice well with the flour, then mix egg and oil lightly to moisten. Finally add in 1 cup cranberries, minced, 1/2 cup nuts, minced. Bake in greased loaf pan at 325 degrees for 60 to 70 min. Remove from pan before storing overnight. This bread should "rest" at least a day after baking. Freezes well.
