I actually dreamt this recipe one night. I have very vivid and often lucid dreams and this isn't the first time something like this came to me in a dream. This is however, by FAR the best recipe that's come to me that way. I woke up, wrote it down and made it the next day and its *delicious*. Hope you enjoy it!

P.S. Did you know that the song "Yesterday" came to Paul McCartney in a dream? Just the melody though, he didn't have words yet so he called it "Scrambled Eggs". True story.

  1. Boil and cook linguini per package directions, drain, drizzle with 1 tablespoon of the olive oil, toss and set aside.
  2. While pasta is boiling, in a small saucepan heat the other 1 tablespoon olive oil over low-medium heat. Add garlic and cook 1 minute. Add cream, 1/4 cup clam juice, clams, Parmesan, Ricotta salata, lemon juice and salt. Bring to a boil and turn heat to low. Cook 2 minutes until thick and cheese is melted. (The Ricotta will still be a bit chunky, that’s ok, this cheese doesn't melt all the way) Mix in parsley and pour over linguini. Mix well.
  3. *Ricotta Salata can be found in the 'fancy cheese' section of the grocery store. You'll probably have to go to a store that sells unique cheese like Whole Foods, Nugget etc. Its usually sold in a wedge and is very easily crumbled. If you can't find it use whole milk Ricotta. (Its well worth it to seek out this cheese, its *amazing* on Puglese drizzled with olive oil)

    This can be wrapped up in one word...Yummy! One day I got a wild hair and decided to make something that I have never tried to make before. So a searching I went on my favorite recipe website, and discovered this one. I prepared it per the directions, the only thing that I did was add about a half a cup of dry white wine in it. I have to say that this is way fun and easy to make.
