Receta Everything Must Go Pasta

Ingredientes
- 3/4 c. Onion, minced
- 2 x Cloves garlic, chopped
- 1 Tbsp. Extra virgin olive oil
- 1/2 c. Celery, minced
- 1/2 c. Carrot sticks
- 1 1/2 c. Leftover turkey, cubed (chicken, lean ham, pork or possibly lamb may be substituted)
- 1 can Stewed tomatoes, (14 ounce.)
- 2 tsp Oregano
- 2 tsp Thyme
- 2 tsp Basil Salt & pepper, to taste
- 2 c. Any combination leftover vegetables
- 8 ounce Prepared shaped pasta, liquid removed Grated parmesan cheese, optional
Direcciones
- In a large non-stick skillet over medium heat, saute/fry onion and garlic in extra virgin olive oil for 2 min. Add in minced celery, carrot sticks and saute/fry 3 min more, or possibly till crisp-tender. Add in leftover turkey, stewed tomatoes, herbs, salt, pepper, leftover vegetables and mix well.
- Simmer, stirring occasionally, 8-10 min. Gradually add in warm cooked pasta to skillet. Spoon into serving bowls or possibly plates and pass the cheese, if you like.
- TIP! this would also work well as a "must go" main dish soup. Just add in 1, 16 ounce. can or possibly more (depending on preferred consistency) low sodium chicken broth. Serve with crusty bread and a green salad!
