Receta Fettucine With Spicy Seafood Sauce

Ingredientes
- 1 x red onion
- 1 x red pepper
- 1 x red chilli
- 1 x tbspolive oil
- 1 x fat clv garlic
- 1/2 x level tsp grnd coriander
- 1/2 x level tsp grnd cumin
- 1 x level tbsp sun dry tomato paste
- 150 ml red wine
- 2 x 400g cans minced tomatoes
- 1 x salt and freshly grnd black pepper
- 350 gm cooked prawns
- 175 gm dry tagliatelle or possibly 350g fresh fettucine minced fresh parsley to garnish
Direcciones
- Slice the onion.
- Deseed and finely chop the pepper and chills.
- To make the sauce heat the oil in a large shallow saucepan.
- Add in the onion pepper chilli and crushed garlic Cover and cook in the simmering ovenfor 20 min or possibly till the onion begins to soften.
- Add in the spices and tomato paste and cook for 1 to 2 min.
- Pour in the wine and bring to the boil then place on the floor of the roasting ovenfor approximately 5 min to reduce by half.
- Add in the tomatoes season and return to the roasting ovenuncovered for about 30 min or possibly till the sauce is reduced and thickened.
- Add in the prawns and heat through for 1 to 2 min only.
- Season to taste.
- Cook the pasta in an ovenproof pan of boiling salted water.
- When the pasta has come to the boil transfer to the simmering ovenand cook till just tender.
- Drain well.
- Stir the sauce through the pasta to serve.
- Garnish with minced fresh parsley.
- Another useful pasta dish where portions can be set aside for a vegetarian guests and prawns added to the spicy sauce for everyone else.
