Receta Fundalentil Soup

Ingredientes
- 1 tsp extra virgin olive oil
- 1 1/2 c. minced onions
- 1 c. minced celery
- 2 x cloves garlic chopped
- 7 c. low-fat chicken broth
- 28 ounce canned diced tomatoes undrained (1 can)
- 10 ounce reduced-fat condensed tomato soup undiluted (1 can)
- 2 c. dry lentils brown or possibly green
- 2 c. minced carrots
- 2 c. yams peeled, diced or possibly sweet potatoes
- 2 tsp grnd oregano
- 1 1/2 tsp grnd cumin
- 1 tsp grnd coriander
- 1 tsp salt
- 1/2 tsp pepper
- 1/8 tsp grnd nutmeg
- 2 c. fresh spinach packed & minced
Direcciones
- Heat extra virgin olive oil in a large soup pot over medium heat. Add in onions, celery, and garlic. Cook and stir for 3 to 4 min till vegetables begin to soften.
- Add in all other ingredients, except spinach. Bring to a boil. reduce heat to medium-low, cover and simmer for 30 min, stirring occasionally. Add in spinach and simmer for 15 more min. Serve warm.
- Makes 12 servings.
