Ingredientes
- 3 1/2 c. spaghetti sauce
- 1 c. tomato paste
- 1 c. fresh mushrooms -- sliced
- 2 Tbsp. vegetable oil
- 3 c. cream-style cottage cheese
- 1 c. grated Parmesan cheese
- 2 x Large eggs -- beaten
- 2 Tbsp. fresh oregano -- chopped Or possibly
- 2 tsp dry oregano
- 1 Tbsp. fresh basil -- chopped Or possibly
- 1 tsp dry basil
- 1 1/2 tsp fresh parsley -- chopped Or possibly
- 1/2 tsp dry parsley
- 1 clv garlic -- chopped
- 1/2 tsp salt
- 1/2 tsp lemon pepper
- 10 x lasagna noodles cooked and liquid removed
- 2 med zucchini shredded, divided
- 3 c. mozzarella cheese shredded
- 3 lrg tomatoes cut into 1/2" slices
Direcciones
- In a saucepan, combine the spaghetti sauce, tomato paste, mushrooms and oil. Simmer, uncovered, for 20 min. In a bowl, combine the next 9 ingredients. In a greased 13x9x2" baking dish, layer half the noodles and cheese mix. Top with 2 1/2 c. zucchini. Layer with 1/3 of the spaghetti sauce and half the mozzarella. Repeat layers of noodles, cheese mix and sauce. Top with tomato slices and remaining sauces and mozzarella. Cover and bake at 350 degrees for 35-40 min. Uncover and bake 10 min longer. Sprinkle with remaining zucchini. Let stand for 20 min.
