Receta Gateau aux Pommes Caramelises~ Caramelised Apple Cake
A French neighbor in NY introduced me to this cake when she served it to me made with apricots. She told me it's traditionally done with apples (I used 1 Honey Crisp and 1 Granny Smith) and wrote on the card:" Note the use of salted butter- this dessert originates in Brittany which is "the land of salted butter"."

Ingredientes
- 2/3 cup sugar
- 2 large tart apples- peeled, cored, and cut in eighths
- Preheat oven to 350 degrees. I used an 8" square pan. Sprinkle sugar in the pan and place it over a burner over medium heat. Use pot holders and tongs to handle the pan. Allow the sugar to melt and turn golden brown. Stir in the apples till coated (the sugar may harden- don't worry. Set pan aside
- 1/2 cup plus 1 tblsp flour
- 1/2 tsp baking powder
- pinch of salt
- 6 tblsp salted butter, softened
- 1/2 cup sugar
- 3 large or extra large eggs
- seeds from a vanilla bean, scraped out
Direcciones
- Sift flour, baking powder and salt together in a small bowl.
- Cream the butter and sugar together till fluffy.
- Add vanilla then eggs one at a time; fold in dry ingredients.
- Pour batter over apples and spread carefully to edge of pan making sure to cover apples.
- Bake for about 30 minutes till top springs back when pressed.
- Run a sharp knife around the edges and invert cake onto a serving platter.
- Allow to cool to slightly warm or room temperature and serve with a big scoop of vanilla ice cream
