  1. Preheat oven to 400F. In large bowl of mixer, whip egg whites till triple in volume. Add in cream of tartar and beat till soft peaks form. Set aside. Sift flour and cornstarch together into large bowl and set aside. Combine egg yolks and sugar in small bowl of mixer and beat till shiny and smooth. Fold yolks into egg whites. Gently fold egg mix into flour mix. Pour into sided 10x12 cookie sheet, spreading proportionately across pan. Bake till top is a light golden, approximately 8 to 10 min. Remove from oven. Cold. Cut pcs to fit the bottom of the 8" square pan.
  2. Variation1. Add in mini chocolate chips to mascarpone cheese/cream mix.
  3. 2.Filling can be used between layers of a chocolate cake. Chocolate sauce is put on top of each layer and allowed to absorb before putting filling on top. Delicious.
