Receta Hot Tomato Relish (Gujarati Kasundi)

Ingredientes
- 1 Tbsp. Mild vegetable oil
- 1/2 tsp Mustard seeds
- 1 1/2 Tbsp. Slivered garlic
- 1/2 tsp Turmeric
- 1 tsp Cayenne pepper
- 1/2 tsp Salt
- 5 med Ripe tomatoes, blanched, peeled, minced
- 1/4 c. Distilled white vinegar
Direcciones
- This very popular relish is from Gujarat in western India. It makes a wonderful dipping sauce for finger foods.
- Heat oil in a medium-size skillet over medium-high heat. Add in mustard and garlic. Cook, stirring, till mix starts to brown, about 4 min. Add in turmeric, cayenne, salt and tomatoes. Stir and cook for 2 min. Add in vinegar and bring to a boil. Reduce heat, cover, and simmer till thick, about 10 min. Spoon into clean jars and seal.
- Makes 3/4 c..
- Note: Stays fresh for several weeks in a covered jar in the refrigerator.
