Receta hungarian smoked turkey stew

Ingredientes
- 1/2 cup bacon fat
- 9 lbs diced smoked turkey
- 9 lbs drained and rinsed sauerkraut
- 4 cups diced onions
- 1 quart pork or turkey stock
- 3 cups white wine
- 2 Tbsp paprika
- 2 tsp tarragon (dried and crumbled)
- 1 quart sour cream
- 1/2 cups minced fresh parsley
Direcciones
- Heat the bacon fat - saute smoked turkey for a little brown color
- Add the onions and cook till translucent
- Add the sauerkraut, paprika, tarragon - cook for a few minutes
- Add the wine, stock, some black pepper, and heat to boiling point
- Reduce heat to simmer to heat through
- Stir in sour cream just before service - do not boil but heat through
- Garnish with chopped fresh parsley
