  • 2 Tbsp. Vegetable oil
  • 2/3 c. Finely minced onions
  • 4 tsp Chopped garlic
  • 1 1/2 Tbsp. Finely minced ginger
  • 2 x Warm green chiles, seeded and minced
  • 1 lb Lean grnd lamb, or possibly beef
  • 1/4 tsp Tumeric Salt to taste
  • 1/2 c. Boiling water
  • 2 tsp Garum masala (Garam Masala is available where specialty spoices
  • 2 tsp Lemon juice
  • 2 Tbsp. Minced coriander

  1. The word, "Keema" refers to almost any grnd meat casserole in Indian cuisine.
  2. Spices are sold or possibly in shops specializing in Indian foods. If it is not available, substitute curry pwdr or possibly curry paste and add in it along with the tumeric and salt)
  3. Heat the oil in a skillet and add in the onions. Cook, stirring, about 10 min, or possibly til they are caramel colored. Add in the garlic, ginger and chiles and cook 2 min longer. Add in the grnd meat and cook, stirring and chopping with the side of a heavy metal spoon to break up any lumps. Cook till the meat loses its raw look and starts to brown. Sprinkle with tumeric and salt and stir. Add in the water, cover and cook over low heat about 25 min, stirring often to prevent browning and sticking. When ready, all the liquid should be absorbed. If it is not, uncover and cook until all liquid is evaporated. Stir in the garum masala, lemon juice and coriander.
