  • 2 slc Atkins bread crusts removed
  • 1/4 c. cream
  • 1 1/2 lb grnd chuck
  • 1/4 c. freshly-grated Parmesan cheese
  • 2 Tbsp. finely-minced fresh parsley
  • 1 x egg yolk
  • 1 x garlic clove finely minced
  • 3/4 tsp salt divided
  • 1/2 tsp freshly-grnd black pepper
  • 2 Tbsp. extra virgin olive oil
  • 1 jar low-carb marinara sauce - (8 ounce)
  • 1 Tbsp. chopped fresh basil leaves (or possibly 1 tspn dry basil)

Direcciones

  1. In a large bowl soak bread in cream till soft. Add in grnd chuck, Parmesan cheese, parsley, egg yolk, garlic, salt, and pepper. Mix well. Form mix into 1 1/2-inch meatballs.
  2. Heat extra virgin olive oil in large skillet over medium heat. Add in meatballs and brown on all sides, about 10 min. Transfer meatballs to a plate lined with paper towels. Wipe out skillet.
  3. Add in tomato sauce and basil to skillet. Bring to a simmer over medium heat. Add in meatballs, cook on low 5 min till heated through.
  4. This recipe yields 4 servings.
