Receta Koo Koo Roo's Santa Fe Pasta

Ingredientes
- 1 pkt Rotini pasta - (16 ounce)
- 4 quart water - (to 5 quarts)
- 1 x chicken breast fillet cooked, diced
- 1/2 c. cooked yellow corn kernels
- 1/3 c. minced cilantro
- 1/4 c. minced green onion
- 2 Tbsp. diced red bell pepper
- 2 Tbsp. diced green bell pepper
- 1/2 c. grated Parmesan cheese
- 1 1/4 c. V-8 juice
- 1 1/2 Tbsp. extra virgin olive oil
- 1 Tbsp. red wine vinegar
- 1 1/2 tsp chili pwdr
- 3/4 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Direcciones
- Prepare the pasta by bringing 4 to 5 qts of water to a rolling boil in a large saucepan. Add in pasta to the pan, and when water begins to boil again, cook for 8 to 11 min. Pasta should be al dente, or possibly mostly tender but with a slight toughness in the middle.
- Whisk all of the dressing ingredients together in a small bowl. Cover and refrigeratethe dressing till you're ready to use it.
- When pasta is done, pour it into a large bowl. Add in the dressing, then toss. Add in the remaining ingredients to the pasta, and toss till combined. Cover and refrigeratefor several hrs before serving.
- This recipe yields 8 servings.
