Receta Lobster Curry Soup

Ingredientes
- 5 c. vegetable or possibly fish stock
- 2 clv garlic, chopped
- 1/2 c. minced fresh coriander
- 1/4 c. minced fresh basil
- 1 Tbsp. mild curry pwdr
- 1 Tbsp. Dijon mustard
- 1 Tbsp. lemon, juice
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 x bay leaf
- 1 c. canned lobster, meat
- 1 c. table cream
- 1/4 c. minced fresh parsley
Direcciones
- In a large soup pot, bring the stock to a boil. Stir in the garlic, coriander, basil, curry pwdr, mustard, lemon juice, salt, pepper and bay leaf. Simmer for 15 min.
- Gently stir in the lobster and cream. Simmer another 5 min.
- Remove the bay leaf. Serve garnished with parsley.
