Receta Mediterranean Tomato Relish
This is a great relish for fish and chicken, especially in the height of tomato season
Ingredientes
- 3 Heirloom Tomatoes
- 1/2 small red onion
- 1 Heaping Tbl. Capers
- 1 Heaping Tbl. Olives, Pitted, rough chop
- 3 cloves Garlic, finely minced
- 1 Tsp Fresh Basil
- 1 Tsp. Fresh Oregano
- 1 Tsp Balsamic Vinegar
- 1 Tbl. Extra Virgin Olive Oil
- Salt & Pepper to taste
Direcciones
- Cut tomatoes in 1/2, gently remove seeds, medium dice
- Small dice the red onion
- Mince Garlic
- Rough chop the herbs
- Combine tomatoes, olives, garlic,capers and onion, let sit for 15 minutes, drain excess liquid
- Add herbs, salt, pepper, Olive oil, and vinegar.
