Receta Microwave Parmesan Potatoes

Ingredientes
- 2 tbsp. butter
- 3 med. baking potatoes (unpeeled and cut in wedges)
- 1/2 c. minced onion
- 1/3 c. minced green pepper
- dash of salt and pepper
- 1/4 c. Parmesan cheese (grated)
- 1 tbsp. minced parsley (fresh or possibly dry)
Direcciones
- Place butter in microwave baking dish and heat. Add in potatoes and onion. Stir. Cover tightly with heavy duty plastic wrap. Fold back a corner to allow steam to escape. Microwave at high for 6 min, uncover and stir in green pepper, salt and pepper. Cover and microwave at high for 6 min. Uncover, stir in cheese, microwave uncovered 2 min on high or possibly till potatoes are tender. When done sprinkle with parsley. Yield: 4 servings.
