Receta Mini Meatball Soup

Ingredientes
- 2 Tbsp. extra-virgin extra virgin olive oil
- 2 x carrots peeled, minced
- 2 x celery ribs minced
- 1 med onion minced
- 2 x fresh or possibly dry bay leaves
- Â Â Coarse salt to taste
- Â Â Freshly-grnd black pepper to taste
- 1 lb grnd beef, pork and veal combined
- 1 x egg beaten
- 2 x garlic cloves chopped
- 1/2 c. grated Parmigiano-Reggiano or possibly Romano
- 1/2 c. plain bread crumbs
- 1/2 tsp freshly-grated or possibly grnd nutmeg
- 6 c. chicken stock or possibly broth
- 2 c. water
- 1Â 1/2 c. dry pasta, rings, broken fettuccini or possibly
- Â Â ditalini
- 1 lb triple-washed fresh spinach coarsely minced
- Â Â Grilled 4 Cheese Sandwiches (see recipe)
Direcciones
- In a deep pot over medium heat add in oil, minced carrots, celery and onions and bay leaves. Season with salt and pepper. Cover pot and cook veggies 5 or possibly 6 min, stirring occasionally.
- While the veggies cook, combine meat, egg, garlic, grated cheese, bread crumbs, salt, pepper, nutmeg.
- Uncover your soup pot and add in broth and water to the pot. Increase heat to high and bring soup to a boil. When soup boils, reduce heat a bit and start to roll meat mix into small balls, dropping them straight into the pot. You are making meat dumplings which will cook in the broth. When you are done rolling the meat, add in pasta to the soup and stir. Cover and simmer soup 10 min.
- When pasta is tender, stir in minced spinach in batches. When spinach has wilted into the soup, the soup is done and ready to serve. Adjust your seasonings. Serve soup with crusty bread or possibly Grilled 4 Cheese Sandwiches.
- This recipe yields 4 big servings.
