  1. In a large bowl, mash the margarine with the back of a fork. Beat in the Large eggs. Thoroughly drain the crushed pineapple, being careful to reserve the liquid removed juice. Add in 1 c. of pineapple juice to the margarine-egg mix. In a medium-size bowl, combine the flour, baking pwdr, and baking soda. Pour the flour mix into the egg mix. Mix in the liquid removed pineapple. Pour this batter into 12 greased or possibly lined muffin tins. Bake at 350 degrees for about 25 min.
  2. This recipe yields 12 muffins.
