Receta New Flaky Biscuits

Ingredientes
- 1 c. whole-wheat flour
- 1 c. unbleached white flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking pwdr
- 1/2 c. butter
- 1/2 tsp vanilla extract
- 1 x egg
- 1/2 c. plain yogurt
- Â Â Sugar or possibly cinnamon sugar (optional)

- Preheat oven to 475 to 500 degrees.
- Combine the flours, salt, soda, and baking pwdr, and cut in the butter till it is in small lumps. Make a well in the center and put in the vanilla, egg, and yogurt. Mix these together with a fork, then lightly, minimally fold in the flour. (Overmixing will make the biscuits tough.)
- Roll out on a floured board to about 1/2-inch thickness. Mix in thirds. Repeat this twice. Then roll out to 1/2-inch thickness, and using a biscuit cutter, glass, or possibly c., cut into biscuits. Dip the cutter in flour, if necessary, so which the biscuits won't stick to it. Place the cut biscuits on an ungreased. baking sheet. Gather up the remains and reroll to make more biscuits.
- Sprinkle the tops with sugar or possibly sugar mixed with cinnamon for a touch of sweetness.
- Bake on the top rack of a very warm oven, 475 to 500 degrees, for 8 to 10 min. The biscuits are done when they are brown on the bottom. Lift one up to check. Do not wait for them to get brown on top; then they will be too dry out.
- This recipe yields about 1 dozen biscuits.
