Receta Orange Cranberry Quick Bread

Ingredientes
- 2Â 1/2 c. flour
- 2 tsp baking pwdr
- 1/2 tsp baking soda
- 1 c. sugar
- 1/4 tsp salt
- 1/2 c. minced pecans or possibly walnuts
- 2Â 1/2 tsp grated orange rind divided
- 2 lrg Large eggs
- 3/4 c. fresh orange juice
- 1/2 c. mayonnaise
- 1Â 1/2 c. minced cranberries
- 2 Tbsp. sugar
Direcciones
- Combine first 5 ingredients in a large bowl; stir in minced pecans and 2 tsp. orange rind.
- Combine Large eggs, orange juice, and mayonnaise; stir into dry mix just till moistened. Mix in minced cranberries; spoon into a greased and floured 9- by 5-inch loaf pan.
- Combine 2 Tbsp. sugar and remaining 1/2 tsp. orange rind; sprinkle over batter.
- Bake at 350 degrees for 55 min. Cover with aluminum foil, and bake 10 more min. Cold bread in pan on a wire rack 5 min; remove from pan, and cold completely on wire rack.
- This recipe yields 1 loaf.
