Receta Oyster Beignets Served On Fleur De Sel And Caramelized Onions

- 20 x oyster
- 8 x egg, separated, whites, only
- 4 c. yellow cornmeal
- 4 c. two percent lowfat milk
- 1 c. canola oil
- 1 x scallion, thinly, sliced
- Â Â salt
- Â Â pepper
- 2 c. vegetable oil

- To make the batter, whip the egg whites with a hand beater till stiff peaks form. In a bowl, mix the lowfat milk, the cornmeal, the oil and the scallions. Season with salt and pepper. It should look like pancake batter. Mix in the egg whites.
- In the meantime, put 2 c. of vegetable oil in a deep saucepan and bring the temperature up to 400 degrees over a high heat. Use a kitchen thermometer to measure the temperature. Dredge the oyster in flour and then in the batter. Fry for 3 min. Remove the oysters from the oil using a slotted spoon and drain them on paper towels.
- Season with salt and serve on a bed of caramelized vidalia onions, fleur de sel and sea asparagus.
