Receta Pistachio Cranberry Cookies

Ingredientes
- 1Â 3/4 c. flour
- 1 tsp baking pwdr
- 3/4 tsp baking soda
- 1/2 tsp kosher salt
- 3/4 c. unsalted butter - (1 1/2 sticks) softened
- 1Â 1/4 c. light brown sugar - (packed)
- 1 lrg egg
- 1 tsp vanilla
- 1 c. shelled salted pistachios coarsely minced
- 1/2 c. sun-dry cranberries
- Â Â (or possibly dry cherries or possibly diced dry apricots)
Direcciones
- Stir together the flour, baking pwdr, baking soda and salt and set aside.
- Cream the butter and brown sugar together with a wooden spoon till smooth. Blend in the egg and vanilla. Gradually blend in the dry ingredients till well mixed. Stir in the nuts and cranberries.
- Drop the dough by Tbsp. onto ungreased baking sheets, leaving about 2 inches between each. Bake the cookies in a 375-degree oven till light golden (centers should be soft), about 10 min. Remove from oven and let stand 2 min, then transfer to a rack to cold completely.
- This recipe yields about 3 dozen cookies.
