Receta Pistachio Cranberry Cookies

Ingredientes

  • 1 3/4 c. flour
  • 1 tsp baking pwdr
  • 3/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 3/4 c. unsalted butter - (1 1/2 sticks) softened
  • 1 1/4 c. light brown sugar - (packed)
  • 1 lrg egg
  • 1 tsp vanilla
  • 1 c. shelled salted pistachios coarsely minced
  • 1/2 c. sun-dry cranberries
  •     (or possibly dry cherries or possibly diced dry apricots)

Direcciones

  1. Stir together the flour, baking pwdr, baking soda and salt and set aside.
  2. Cream the butter and brown sugar together with a wooden spoon till smooth. Blend in the egg and vanilla. Gradually blend in the dry ingredients till well mixed. Stir in the nuts and cranberries.
  3. Drop the dough by Tbsp. onto ungreased baking sheets, leaving about 2 inches between each. Bake the cookies in a 375-degree oven till light golden (centers should be soft), about 10 min. Remove from oven and let stand 2 min, then transfer to a rack to cold completely.
  4. This recipe yields about 3 dozen cookies.
  5. Yield: 3 dozen
