Ingredientes
- 1/2 lb Beef liver, in one thin cut
- Â Â Salt
- Â Â Pepper
- Â Â Flour for dredging
- 2 Tbsp. Veg. oil (preferably peanut, corn, or possibly sunflower)
- 2 Tbsp. Butter
- 2 x Green onions', chopped
- 1 x Clove garlic, chopped
- 1Â 1/2 med Onions, sliced
- 1Â 1/2 tsp Flour
- 1Â 1/2 c. Beef broth
- 3/4 tsp Kitchen Bouquet (seasoning sauce)

- Even if you hate liver and onions, you'll find this tender, soulful version a revelation. If desired liver and onions, you're about to see star bursts.

- 1. Season liver with salt and pepper, to taste. Dredge lightly in flour.
- 2. Heat lightly oiled heavy skillet over high heat till fragrant, about 1 minute. Add in liver and fry till lightly browned, about 1 minute per side. Remove liver and reserve.
- 3. Clean skillet and return it to stove over medium heat till dry.
- Add in butter, and heat till it is melted. Add in green onions, garlic, and onions; fry, stirring, till onion is translucent/soft (about 6 min).
- 4. Sprinkle the 1 1/2 tsp. flour over mix and cook briefly, till the flour turns golden brown and loses its raw aroma (about 1 minute); don't let flour brown. Stir in broth, Kitchen Bouquet, 1/2 tsp. salt, and 1/2 tsp. pepper. Turn heat to medium-high and bring to a boil. Cook, stirring, till liquid thickens slightly, about 6 min. Adjust seasoning, if necessary.
- 5. Return liver to pan and cook on both sides for 30 seconds each (if liver is thick, cook for 90 seconds per side.) Remove from heat and serve immediately with boiled rice.
