Receta Potato Broccoli Soup (Cotterer)

Ingredientes
- 1 Tbsp. Butter or possibly margarine
- 1 c. Minced onion
- 1Â 1/3 lb (4 medium) potatoes, cut into 3/4" cubes
- 2Â 1/2 c. Water
- 2 x Chicken bouillon cubes
- 10 ounce Frzn minced broccoli, thawed and liquid removed
- 1Â 1/2 c. Shredded cheddar cheese
- Â Â Salt and pepper, to taste
Direcciones
- In 2- to 3-qt saucepan over medium heat, heat butter. Add in onion: saute/fry 5 min. Add in potatoes, water and bouillon cubes. Bring to a boil, reduce heat, cover and cook 15 min.
- Remove 1 c. of potato cubes with a slotted spoon; set aside. Pour contents of saucepan into container of electric blender. Holding lid down tightly, blend till smooth; return to saucepan. Fold in reserved potatoes and broccoli. Over medium-low heat, gradually add in cheese, stirring till soup is heated through and cheese is melted. Add in seasonings.
