Receta Prune Cake

Ingredientes
- 4 x Large eggs
- 2 c. sugar
- 1Â 1/2 c. oil
- 2 c. flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp salt
- 14 ounce cooked and strained prunes (or possibly 3 jars Gerber baby food prunes)
- Â Â Frosting
- 8 ounce cream cheese, softened
- 4 Tbsp. margarine
- 3 c. powdered sugar
- 1 tsp vanilla
Direcciones
- In a large bowl, beat Large eggs till thick. Add in sugar and oil and mix to combine.
- In another bowl, sift together the flour, baking soda, cinnamon and salt. Add in to the egg mix and combine well. Add in the prunes and mix well.
- Pour batter into a Teflon pan measuring 17 1/2 inches by 11 1/2 inches. (If you do not have a Teflon pan, grease and flour pan before pouring in batter.)
- Bake at 350 degrees for 25 to 30 min.
- While cake is baking, prepare frosting by mixing cream cheese and margarine till well-combined. Slowly add in powdered sugar, then vanilla. Mix till of spreading consistency. Frost cake after completely cooled.
