  • 4 Tbsp. soft canola margarine
  • 1 lb soft tofu liquid removed
  • 15 ounce canned solid-pack pumpkin
  • 4 ounce soy cream cheese (1/4 c.)
  •     at room temperature
  • 1 c. sugar
  • 1 tsp vanilla extract
  • 3/4 tsp grnd cinnamon
  •     plus additional for dusting
  • 1/2 tsp grnd nutmeg
  • 1/2 tsp grnd allspice
  • 1/4 tsp grnd cloves

  2. Light yet luscious and not overly sweet, this cheesecake is sure to become an all-time holiday favorite.
  3. 1. Position rack in center of oven; pre-heat oven to 350F. Coat 8 1/2-inch springform pan with cooking spray.
  4. 2. Make crust: In food processor, pulse graham cracker crumbs and margarine till proportionately moistened. Firmly press crumb mix into bottom and about 1/2 inch up sides of prepared pan. Bake till set, about 10 min. Transfer to wire rack and cold completely. Keep oven on for baking cheesecake.
  5. 3. In food processor, puree tofu till smooth. Add in pumpkin and process till blended. Add in soy cheese, sugar, vanilla, cinnamon, nutmeg, allspice and cloves and process till smooth and well combined. Pour mix into cooled crust and bake on center rack 45 min.
  6. 4. Turn oven off. Let cheesecake cold in oven 1 hour without opening door. Transfer to wire rack and cold completely. Cover loosely with plastic wrap and chill cheesecake at least 8 hrs or possibly overnight. (Do not worry if cheesecake seems a little soft; it will hard up during chilling.)
  7. 5. To serve, run a long, thin knife around inside edge of pan to loosen cake; remove sides of pan. Lightly dust top of cheesecake with cinnamon and serve at room temperature.
