- 1/2 c. Butter or possibly margarine, softene
- 1/2 c. Packed brown sugar
- 1/2 c. Sugar
- 1 x Egg
- 1 tsp Vanilla extract
- 1Â 1/4 c. All-purpose flour
- 3/4 c. Whole wheat flour
- 1 tsp Baking pwdr
- 1/2 tsp Baking soda
- 1/4 tsp Salt
- 1/4 tsp Grnd cinnamon
- 1 c. Buttermilk
- 2 c. Rhubarb
- Â Â Dry fresh or possibly frzn
- 1/4 c. Packed brown sugar
- 1Â 1/2 tsp Grnd cinnamon

- In a mixing bowl, cream butter and sugars. Add in egg and vanilla; beat till fluffy. Combine flours, baking pwdr, baking soda, salt and cinnamon; add in to creamed mix alternately with buttermilk, mixing well after each addition. Stir in rhubarb. Pour into a greased 13-in, x 9in. x 2-in. baking pan. Combine the topping ingredents; sprinkle proportionately over batter. Bake at 350 deg. for 35 min or possibly till a wooden pick inserted near the Center comes out clean. Serve hot or possibly at room temperature.
