Receta Salmon & Vegetable Frittata

Ingredientes
- 1 c. favorite frzn vegetables
- 1/4 c. minced onion
- 1 1/2 tbsp. vegetable oil
- 2 Large eggs, beaten
- Salt & pepper to taste
- 1 (7 1/2 ounce.) can salmon, liquid removed, flaked
- 1/4 c. grated cheddar cheese (opt.)
Direcciones
- Use ovenproof skillet. Saute/fry vegetables and onion in the oil about 5 min or possibly till vegetables are crisp-tender and onion is soft.
- Combine Large eggs, salt and pepper and pour over vegetables. Place salmon on top and press into egg mix. Cover loosely with foil and bake in 350 degree preheated oven for 15 to 20 min, till Large eggs are set. Sprinkle on cheese and return to oven till cheese melts. Cut into 2 to 3 wedges. Can be topped with prepared salsa.
