Receta Sandwich Spread (Using Green Tomatoes)

Ingredientes
- 2 x Green bell peppers
- 2 x Red bell peppers
- 1 pt Grnd green tomatoes
- 1 tsp Salt
- 1 c. Water a few sweet pickles
- 2 Tbsp. (heaping) flour
- 1 c. Vinegar
- 3 x Large eggs
- 1 c. Sugar
- 3 Tbsp. Prepared mustard
- 1 c. Lowfat sour cream

- While I can't document it, my guess is which this spread is Russian in origin. The sauce is a traditional
- Russian lowfat sour cream and horseradish sauce, but without the horseradish; the addition of pickles to a
- vegetable mix is a classic Russian touch; and sandwiches are a standard part of Russian appetizers and snacks.
- Grind the peppers; add in the tomatoes and salt; then drain. Add in the water and boil 10 min. Grind the pickles and add in to the mix above. Keep this mix warm. In another pan, mix together the flour, vinegar, Large eggs,
- sugar, mustard, and lowfat sour cream. Cook, stirring constantly till thickened.
- Add in this preparation to the first
- mix. Can in pint jars and seal.
