Receta Smoked Potato Salad

Ingredientes
- 1Â 1/2 lb Cool smoked thin-skinned potatoes, see oven smoking recipe, cut in 1/2" cubes
- 2 lrg Celery stalks, thinly slice
- 2 x Green onions, thinly sliced
- 1Â 1/2 Tbsp. Liquid removed capers
- 1/2 c. Lemon mayonnaise
- Â Â (see below)
- Â Â Salt and Pepper
- 2 Tbsp. Lemon juice
- 2 x Cloves garlic
- 1 lrg Egg
- 1/8 tsp Paprika
- 1 c. Salad oil
- Â Â Salt and pepper

- LEMON MAYONNAISE INSTRUCTIONS: In a blender of food processor, whirl lemon juice, garlic, egg and paprika till blended. With motor running, slowly pour in salad oil till combined. Add in salt and pepper to taste. Cover and refrigerateup to 2 days. makes 1-1/4 c.
- SMOKED POTATO SALAD INSTRUCTIONS: In a bowl, gently mix together the potatoes, celery, onions and capers. Stir in 1/3 c lemon mayo, add in more if you like. Season with salt and pepper to taste. Serve or possibly cover and refrigerateup to 2 days.
