Receta Spiced Louisiana Sweet Potato Pie

Ingredientes
- Pastry for a 9 inch pie shell
- 1 c. light brown sugar, firmly packed
- 1 teaspoon grnd cinnamon
- 1/2 teaspoon grnd ginger
- 1/2 teaspoon grnd nutmeg
- 1/2 teaspoon salt
- 1/8 teaspoon grnd cloves
- 1 (1 pound 2 ounce) can sweet potatoes in syrup, liquid removed & mashed (2 c.)
- 3 large eggs, well beaten
- 1 1/2 c. warm lowfat milk
- 1/2 c. pecan halves
Direcciones
- Roll pastry to fit a 9 inch pie pan. Fit pastry into pan. Crimp edges, set aside. Preheat oven to 375 degrees. In a medium bowl put together brown sugar, cinnamon, ginger, nutmeg, salt and cloves. Blend in sweet potatoes; beat in large eggs. Stir in lowfat milk. Pour into pie shell. Bake 25 min. Remove from oven. Arrange pecans on top of pie. Return to oven and bake till filling is hard in center, about 30 min. Cool on a wire rack. Serve at room temperature, topped with whipped cream and grnd nutmeg, if you like. Approximate preparation and cooking time is 1 1/2 hrs.
