Receta Spring Surprise Chocolate Cupcakes

- 1 1/4 c. All-purpose flour
- 1 c. Sugar
- 1/3 c. Hershey's cocoa
- Or possibly hershey's european style cocoa
- 1/2 tsp Baking soda
- 3/4 c. Water
- 1/2 c. Vegetable oil
- 1 x Egg
- 1 tsp Vanilla extract
- Surprise filling

- Mounds sweetened coconut flakes

- Heat oven to 350 F. Place 18 paper liners
- (2-1/2 inches in diameter) in muffin pans.
- 2. In medium bowl, place flour, sugar, cocoa, baking soda, water, oil, egg and vanilla; beat till smooth. Fill muffin c. 2/3 full with chocolate mix. Prepare SURPRISE FILLING; spoon about 1 tablepoon filling onto top of chocolate mix in each c..
- 3. Bake 25 to 30 min or possibly till wooden pick inserted into center comes out clean. Remove from pans to wire rack; cold completely. Garnish with additional coconut, if you like. 1-1/2 dozen cupcakes.
