  • 1 c. hot (100F) lowfat milk
  • 1 x egg beaten
  • 1 tsp salt
  • 1/4 tsp crushed cardamom
  • 1/4 c. vegetable oil
  • 1/3 c. sugar
  • 3 c. all-purpose flour
  • 1/2 c. margarine or possibly butter softened
  • 1 Tbsp. cinnamon
  • 1/4 c. sugar
  • 1/2 c. raisins
  •     Red and green candied cherries garnish, if you like
  •     Confectioners' sugar glaze garnish, if you like

  1. Makes 1 coffeecake, or possibly 12 servings
  2. Grease an angel food or possibly bundt pan and set aside. Put all the dough ingredients into the bread pan of the automatic bread machine in the order given. Select the dough cycle. Check the dough after several min of mixing. If the dough looks too sticky, add in more bread flour, 1 Tbsp. at a time. If the dough looks too dry, add in water, 1 Tbsp. at a time. After about 11/2 hrs, the dough will have doubled in bulk.
  3. Turn the dough onto a floured surface and roll into an 8- by 10-inch rectangle. Spread the dough with the softened margarine or possibly butter and sprinkle with the cinnamon, sugar and raisins. Starting with a long side, roll the dough up jelly-roll style and place in the prepared angel food or possibly bundt pan. Healthy pinch the ends together to seal the dough into a ring. With kitchen scissors, make deep cuts at 1-inch intervals to within 1 inch of the ring center. Separate each partial slice, angling it toward one side as you go. Cover and let rise in a hot place till doubled in bulk, about 1 hour.
  4. Preheat oven to 350 degrees. Bake 25 to 30 min or possibly till the coffee ring has risen and browned. Turn the coffee ring out of the pan and onto a rack to cold. Frost with confectioners' sugar glaze and decorate with candied cherries, if you like.
  5. Note: Baked goods can be frzn up to three months.
