  • 4 1/2 ounce Coarsely minced mixed dry fruit, such as raisins, apricots, cherries, prunes, mixed fruit, or possibly cranberries
  • 1 c. Orange juice
  • 2 tsp Sugar
  • 1 Tbsp. Dry orange peel
  • 4 x 3 ounce baked sweet potatoes

  1. 1. In a small nonaluminum saucepan, combine all ingredients except potatoes and bring to a boil. Lwer heat and simmer, covered, for 5 min. Uncover and simmer till liquid is slightly syrupy, 10-15 minutes.
  2. 2. With fork, blossom the potatoes and spoon 1/4 of the fruit mix proportionately over each.
