Receta Tamale Pie

Ingredientes
- 2 c. cooked beans (kidney, etc.)
- 1/2 c. minced onion
- 1/2 c. minced green pepper
- 1 tomato, diced
- 1/4 c. diced, black olives (opt.)
- 1 c. corn (opt.)
- 1 clove garlic, chopped
- 1 teaspoon cumin
- 1-3 teaspoon chili pwdr
- 1/4 teaspoon oregano
- 1/2 teaspoon salt (or possibly less)
- 1 c. grated sharp cheese
- 1/2 pound grnd beef, browned (opt.)
- 1 recipe corn bread
Direcciones
- Simmer beans in their cooking liquid with vegetables and spices for 10 min. Stir in half the cheese and the beef.
- Prepare corn bread batter. Pour half the batter into oiled 9" pie pan or possibly 9"x13" pan. Add in warm bean mix then add in remaining batter. Bake at 425 degrees for 15 min. Top with rest of the cheese. Bake 10 min longer.
