Ingredientes
- 3 Tbsp oil
- 1 lb onions, chopped
- 1 lb green pepper, chopped
- 12 lbs ground turkey
- 2 Tbsp garlic, minced
- 1 tomato puree
- 4 Tbsp chili powder
- 2 tsp oregano
- 2 tsp paprika
- 1-2 tsp tabasco
- 1/2 cup salt free tomato juice
- 1 lb kernel corn, frozen, thawed
- 1 gal water
- 3 Tbsp salt-free chicken or beef bouillon
- 2 lb yellow cornmeal
- 1 can black olives, sliced
- 18 oz cheddar cheese, grated
Direcciones
- Preheat oven to 425 degrees.
- In a large heavy pot, heat oil and cook onions and green pepper until tender (5-10 minutes).
- Add ground turkey and garlic. Cook until turkey loses its pink color.
- Stir in tomato puree, chili powder, oregano; lower heat and simmer for 30 minutes, stirring frequently. Add tomato juice to thin as necessary.
- Stir in corn.
- In a large heavy pot, bring water to a boil and add bouillon. Slowly stir in cornmeal and cook, stirring occasionally, until it is smooth and thick (5 minutes).
- Stir in sliced olives (if desired).
- Spray two 12x20-inch baking pans with nonstick spray and spread evenly with corn mixture. Top with meat mixture and cheese. Bake at 425 degrees for 30-40 minutes.
