Ingredientes
- 1Â 3/4 lb Very fresh beef fillet, finely grnd
- 1 c. Chopped white onion
- 1/2 c. Capers, rinsed, liquid removed, and finely minced
- 4 x Serrano chiles, stemmed, seeded, and chopped
- 1/2 bn Cilantro, leaves only, coarsely minced
- 2 tsp Worcestershire sauce
- 2 tsp Extra-virgin extra virgin olive oil
- 1 dsh Tabasco sauce
- 1/2 bn Parsley, leaves only, coarsely minced
- 6 x Very fresh egg yolks
- 12 x Limes, halved
- Â Â Toast triangles, for serving

- In a very cool mixing bowl, combine the grnd beef, onion, capers, chiles, cilantro, Worcestershire, extra virgin olive oil, and Tabasco. Mix together briefly with your hands till all the ingredients are well distributed. Form the mix into 6 loose round patties. Place a patty in the middle of each of 6 chilled appetizer plates, make a well in the center of each, and scatter some parsley around the edge of each plate. Nestle an egg yolk in the center of each patty and garnish each plate with lime halves and toast triangles. Serve immediately.
