Receta Traditional Roman Fettuccine

This is as real as simple roman pasta gets - very traditional, very easy to make, and very very good. The family will love it!

  1. Heat about 4 qts salted water to boil the pasta.
  2. In a saute pan, quick fry the onions in olive oil and 1/2 tbsp butter for about 1 minute. Add the peas and cook for an additional 2 minutes stirring constantly. Add the chopped ham, and salt and pepper to taste and cook for about 2 minutes. Set aside.
  3. In a large bowl, mix eggs and about 1/4 cup parmesan cheese.
  4. When pasta is done (should be chewy), drain and immediately mix into large bowl with eggs and cheese. Mix until eggs thicken around the fettuccine.
  5. Add pea and ham sauce to the large bowl and mix thoroughly, adding remaining butter. Top with remaining cheese and more pepper.
  6. Serve hot!
