Receta Tropical Shrimp Salad With Avocado

Ingredientes
- 12 large cooked pink shrimp
- 3 hearts of palm
- 1 tomato
- 1 avocado
- 1 thick slice of fresh pineapple
- ½ mango
- 2oz (50g) of raisins
- 2/3 ounce (20g) de pine nuts
- ½ C (10cl) of cream
- 1tsp (4cl) of rum
- Juice of ½ lemon
- 1 tbsp of mustard
- Salt and pepper
Direcciones
- Pour rum in bowl and add in raisins
- Let raisins soak in rum during preparation time
- Cut avocado in 2 pcs
- Mash one half with a fork
- Add in mustard, heavy cream and lemon juice to the mashed avocado
- Combine till sauce is very creamy
- Salt and pepper
- Finish by adding the other half of the avocado cut into small cubes
- Cut the mango, tomato, pineapple and hearts of palm into small cubes (diced)
- Put all into a salad bowl
- Add in shelled shrimp
- Sprinkle coarsely minced pine nuts over mix
- Pour avocado sauce over mix
- Add in raisins which have marinated in rum
- Mix well and correct seasoning if needed.
