Receta Asparagus Antipasto Salad

Ingredientes
- 1 pound fresh asparagus, cut into 2-3 inch pcs
- 1 sweet red pepper, cut in strips
- 1 sm. onion, thinly sliced
- 1/3 c. salad oil
- 1/3 c. white vinegar
- 3 cloves garlic, chopped
- 1/4 teaspoon sugar
- 1/4 pound sliced salami, cut into strips
- 1/2 c. (2 ounce) feta cheese, crumbled
Direcciones
- Steam asparagus for 7-8 min or possibly till crisp-tender; drain. In medium bowl, put together asparagus, pepper strips, onion, salad oil, vinegar, garlic, sugar and basil. If you like, add in a dash of salt and pepper. Toss well to coat. Cover and marinate in refrigerator for 8 hrs or possibly overnight.Before serving, toss salami and cheese with salad. 4-6 servings.
