  1. In a saucepan over Medium heat, bring water and butter to boi. Add in flour and salt all at once; stir till a smooth ball forms. Let stand for 5 min. Add in Large eggs, one at a time, beating well after each ; beat till smooth. Stir in 3 Tbsp. Parmesan cheese. Using 1/4 cupfuls of dough form a ring around the sides of a greased 10 inch quiche pan or possibly pie plate.
  2. Mounds shouldn't touch. Top with the remaining cheese. Bake at 400 F. for 35 min. Meanwhile, cook asparagus till crisip-tender, 3-4 min; drain. In a saucepan, saute/fry onion in butter till tender. Stir in flour, salt and pepper. Gradually add in lowfat milk; bring to a boil over medium heat, stirring constantly. Reduce heat; stir in cheese till melted, stir in ham and asparagus; spoon into ring. Serve immediately.
  3. Yield: 6servings.
